Natural yeast fermentation with no added sugar or acid. It is hard to find a Sancerre producer that cares this much. Grown on limestone and kimmeridgian soil wich comes through on the palate. Great minerality and salinity come through on every sip. One, if not my favorite, sancerre producer. while alot of Sancerre producers have moved toward
