Joh. Jos. Prüm Graacher Himmelreich Riesling Spätlese, 2020 cassis "Saignée" ("to bleed" in French)This wine is made of 100% Riesling. We would pair it with Spicy Szechuan style prawns, over rice. Sptlese is a German Riesling classification for fully ripened or late harvested grapes. As such, Sptlese Riesling is off dry, and rich in fruit and acidity. The 2020 vintage started with a mild winter, but also some good humidity. Overall, this vintage had more sunshine hours than ever, rendering healthy grapes with moderate sugar levels and good acidity.
