Pair it with a lightly pan fried salmon with crispy brussels sprouts dressed in a pomegranate vinaigrette. The grapes are from 50+ year old vines in Les Ctes de la Roche, just west of the boundaries of Julinas. The wine undergoes a semi carbonic maceration in wood before being aged in stainless steel, accentuating the freshness, fruit, and vibrancy of the juice.
