Pierre-Vincent commissioned custom 456L barrels from Francois Freres to reduce the amount of new wood influence

About one third of the aging casks used were new

Aged for 4 5 months in steel, and in bottle for 2 more. Certified organic. Pair with risotto and asparagus, or fennel crusted pork chops with potatoes.
