The grapes are pressed to 300 2000 liter 2 15 year old barrels where they ferment spontaneously. The wine is racked 2 3 times and a small amount of sulfur is added during vinification to preserve freshness. Aging: The wine rests in the same barrels for 18 months and is bottled
