As I noted last time I reported on Carter Cellars
then crushed and fermented on its native yeast and naturally occurring malolactic bacteria at both Monte Bello and Lytton Springs wineries
and no artificial preservatives
the wine seems to be about 5 years away from full maturity and should drink well for at least 40-50 more years
